Vegan Maple Rice Pudding
Prep Time: 30 min
1.5 cup rice
2 cups water
3 cinnamon sticks
2 cups of plant based milk or more
1/3 cup of maple syrup or more to taste
1 tbs vanilla
1 tbs cinnamon
- Add rice, water and cinnamon sticks to a large pot and bring to a boil for about 10-15 min, or until the water has absorbed.
- Then add the milk, syrup and vanilla and stir
- Let it simmer for 20 min. Stirring occasionally.
- Remove cinnamon sticks, taste test and remove form the stove top
- Enjoy hot or cold!
This vegan rice pudding may be a little less sweeter due to the fact there is no condensed milk in it. You may add coconut cream for a more creamery texture. Oat milk can give it a more creamy consistency as well.
I used Basmati rice with vanilla almond milk.
