Vegan Carrot Pineapple Buns



3 1/2 cups grated carrots 

1/2 cup crushed pineapple

1/2 cup vegan butter

1 1/3cup plant-based milk

1 tsp vanilla extract

( optional) 1/2 cup maple syrup or 1 cup cane sugar 

3 1/4 cup flour use any gluten-free flour with xanthan gum

1 1/2 tsp cinnamon

1 tsp  apple pie spice 

1/4 tsp nutmeg 

1/4 tsp grated ginger

1/2 cup chopped walnuts (optional)

2 tsp baking soda

2 tsp baking powder

1 tsp apple cider

1 tsp salt


  1. Combine the grated carrots, crushed pineapple, vegan butter, plant-based milk, vanilla extract,( optional)maple syrup or 1 cup cane sugar fist in a bowl 
  2. In a separate bowl combine flour use any gluten-free flour with xanthan gum, cinnamon, apple pie spice( if you have any), nutmeg, grated ginger, walnuts (optional)
  3. In a small cup Combine baking soda, baking powder, salt and lastly the apple cider vinegar 
  4. In one bowl combine all the ingredients and let it sit for 5 min
  5. I used a donut pan and just covered the whole to make these. You can use any pan to make these buns or even make them into muffins.
