Brown Sugar Pumpkin Muffins

Brown sugar pumpkin muffins and that’s all I’ve got to say about that. Sorry, no fancy story! 


  • 2 Tbs Flaxseed meal
  • 5 Tbs Water
  • 2/3 Cups Maple Syrup
  • 5 Tbs Brown Sugar 
  • 1 Tsp Vanilla Extract
  • 1/4 Cup applesauce
  • 1 Can Pumpkin Puree
  • 1/4 Cup Almond Milk
  • 2 Cups Flour
  • 1 Tsp Cinnamon
  • 1 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • ! Tsp Apple Cider Vinegar


  1. Any bolster the flaxseed meal together with the water set aside for five minutes to create two “flax eggs”.
  2. Preheat the oven to 350° and prepare a muffin pan.
  3. In a separate bowl whisk together the maple syrup and applesauce and brown sugar until well blended.
  4. Add the “flax eggs” to the brown sugar mix.
  5. In a separate bowl stir together all dry ingredients. Then add the wet ingredients.
  6. Scape the batter into the prepared pan. Sprinkle the top with chocolate chips nuts or pumpkin seeds as desired. Then bake for about 25 to 30 minutes.
  7. Enjoy with your favorite drink!

A Balanced Diet



I like to add protein to everything to add to my macro through out the day. 

Add 1 scoop of protein to make them pumpkin protein muffins.

Quick tip:

The muffins are not as sweet as store bought muffins. For more sweetness add more sugar!
